Raspberry & Peppermint Smoothie


A Taste of Summer!

I realised this morning, that since we moved house, I haven’t been eating as much fruit. So, I decided to jazz up my favourite mid-morning Peppermint tea drink by creating a Raspberry and Peppermint Smoothie.

Raspberries are available fresh from the garden and supermarket from midsummer to late autumn, so let us discover some of the wonderful benefits this super fruit has for our skin and health.

Raspberries in Skincare

Raspberry Oil is extracted from the seeds and contains high amounts of Omega 3 and Omega 6, vitamin E and provitamin A. Raspberry Oil is a common ingredient found in summer skincare products, as the plant compounds also contain high amounts of UV-A and UV-B sunscreen. (Raspberry Oil should not be used on its own as a sunscreen protector).

Raspberries for Midlife Health + Beauty

As we age, our skin is less able to protect and recover from the harmful effects of too much sun exposure. UV rays cause sunburn and the production of *MMP (matrix metalloproteinase enzymes), which breaks down collagen in the skin, leading to a host of issues such as premature ageing and skin cancer.

In addition to wearing sunscreen, consuming foods high in Ellagic acid may assist your body in protecting itself from UV ray damage as it blocks the production of MMP enzymes. Some of the highest concentrations of sun protecting Ellagic acid are found in Raspberries, as well as vitamin C, which helps fight off DNA damage to skin cells.

Raspberry & Peppermint Smoothie

Raspberries can sometimes taste a bit sour, so to combat this, I added coconut milk powder and vanilla soya milk to help my smoothie taste creamy. The Peppermint Tea added a subtle refreshing taste and to fortify my smoothie with an extra Vitamin C boost, I also added Acerola Berry powder (more about this little power house in another blog).

As I am use to formulating skincare products in grams (even when measuring liquids), I have stuck to using the same measurements for my recipe. I find it is actually easier than fiddling to see the measurement on the side of a jug, especially as I have failing eye sight due to 1. Age and 2. Severe floaters (sigh).

*I found my smoothie was lovely and creamy, with hints of coconut and peppermint. I am sure my hubby would prefer bolder and sweeter flavours but like I keep saying, make something that YOU enjoy drinking and eating so that healthy doesn't become associated with boring and bland ;)

Raspberry & Peppermint Smoothie

125g fresh or frozen raspberries

125g strongly brewed and cooled, peppermint tea

100g Vanilla Soya Milk

30g Coconut Milk Powder

10g Acerola Berry powder

Place all in a blend for 30 seconds, pour, drink and enjoy.

You could always add yoghurt or other milks, banana and nuts – enjoy experimenting!
